Manager moved the raw chicken to a lower shelf during this inspection.

No paper towels or mechanical hand drying device provided at handwash sink. No towels at handwash sink near three-compartment sink or handwash sink near back door of kitchen. Manager replenished both during this inspection.
No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses. One employee working in kitchen and handling food without proof of food handler training or proof they have been informed of their health reporting responsibilities. Inspector provided manager a new copy of the employee health reporting agreement during this inspection.
Bowl or other container with no handle used to dispense food. Single-use foam cup without handle stored down inside container of seasoning in dry storage area. Manager discarded the cup during this inspection.
Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Employee drink cup stored directly on top of container of cooking oil in dry storage area. Manager moved the drink to another area during this inspection.

Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In pan at cookline: sausage (116F - Hot Holding); sausage patties (98F - Hot Holding). Manager stated the sausage has been held at the cookline for approximately one hour and began reheating them to 165F during this inspection. Sausage 165F, sausage patties 174F.
Toxic substance/chemical improperly stored. Aerosol can containing "Hot Shot" wasp and hornet poison stored on shelf directly beside packets of hot sauce at front counter. Employee removed bug poison from the shelf during this inspection.
Floor soiled/has accumulation of debris. 1. Floor below shelving in dry storage area in back of kitchen soiled with food debris. 2. Floor in corner on left side of mop sink soiled with debris. 3. Floor around canned goods shelf near cookline soiled with food debris.
Wet mop not stored in a manner to allow the mop to dry. Wet mop stored down inside mop bucket in ware wash area.

Chlorine sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Three compartment sink set up and in use. Three-compartment sink chlorine 0ppm. Employee added bleach to sanitizer compartment, then 100ppm.
Employee touched soiled apron/clothes and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Employee put on gloves, then put on and tie apron. Employee proceeded to prepare food at grill without washing hands. Inspector had employee wash hands and put on new gloves before continuing to prepare food.

No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. CFM arrived during this inspection.
