Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed cook move soiled plates to warewashing area, use a sanitizer wiping cloth and then began food preparation without changing gloves. Operator discussed proper glove change and handwashing procedures with cook. Cooked washed hands and changed gloves.
Stop Sale issued on time/temperature control for safety food due to temperature abuse. Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Buffalo sauce (51F - Cold Holding) held at cook line flip top cooler for more than 4 hours per operator. All other TCS items in cooler were in ambient cooling. Operator discarded buffalo sauce and added ice to unit.
