Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed diced tomatoes at 61F on cooks line. Operator stated they came from the walk in cooler. Operator discarded tomatoes.
Carbon dioxide/helium tanks not adequately secured. Observed CO2 tanks not secured in rear storage area.
Equipment in poor repair. Observed reach in cooler not working. Operator has a refrigeration person coming to repair. No food stored in unit. Pulling food from walk in cooler.
