Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. 1.Observed at cook line, fried wings (49F - Cold Holding). Per operator wings was out of temperature for less than one hour. Introduced Time as a Public Heath Control to Manager. Provided manager with form. Manger completed form and time stamped wings during the inspection. 2. One door cooler at cook line, cooked mushrooms (50F - Cold Holding). Per operator item was not prepared or portioned today. Item was left in cooler over night exceeding 6 hours. Operator discarded during the inspection.
