Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Observed manager touching sliced cheese to be used in sandwiches with bare hands. Intervened to prevent food being served, see stop sale. Educated manager.
Stop Sale issued due to food not being in a wholesome, sound condition. Observed cook putting fryer basket on ground and filling basket with chicken wings to cook. Stoped cook from preceding, issued stop sale. Observed manager making bare hand contact with RTE food (sliced cheese), issued stop sale.
