Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. 1. Buffet station, butter packets; (50F - Cold Holding) under no temperature control food for food safety less than 2 hours ago. Per attendant, buffet station foods is discarded at end of breakfast. ( 7am- 9:30am). At end of inspection, butter packets discarded. Suggested using TPHC 2. Buffet station; Glass front cooler; butter packets; (50F - Cold Holding). Butter packets held under 4 hours ago, operator moved to reach in cooler in kitchen to quick chill.
