Product has been in machine for less than 4 hours from walk-in cooler. Discussed with operator and they discontinued use of machine. - Observed Shredded Cheddar Cheese (50F - Cold Holding) in cooler next to steam table on make line. Product had been in cooler for less than 4 hours. Employee placed bag of ice on top of product.
