The following items and hot holding temperatures in the steam Bain: Queso (125F - Hot Holding); Chili (128F - Hot Holding). Manager advised that both items had been there less than four hours, however Manager had both items discarded.

Employee chewing gum while preparing food or while in a food prep/food storage/warewashing area. Employee chewing gum in server area and preparing food order. Manager had employee throw out gum.
