Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Upon inspection, observed ribs 133f in hot hold cabinet # 1 at establishment. Manager stated less than 4 hours. Manager moved ribs to warming cabinet during inspection.

Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishmachine chlorine sanitizer reading 0ppm at time of inspection. Upon examination, chlorine container was empty. Operator replaced container with new one, achieved 50ppm.
