Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Upon inspection, observed ribs 133f in hot hold cabinet # 1 at establishment. Manager stated less than 4 hours. Manager moved ribs to warming cabinet during inspection.
No plan review submitted and approved - renovations were made or are in progress. Must submit plans and plan review application to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Plans must be submitted AND approved within 60 days. Upon inspection, observed changes have been made to establishment from initial plans. Cooker listed on plan review is a smoker, salad bar on plans is now a bar with beer taps, dish machine added in dish area.

Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishmachine chlorine sanitizer reading 0ppm at time of inspection. Upon examination, chlorine container was empty. Operator replaced container with new one, achieved 50ppm.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In walk-in cooler: milk 47f for approximately 30 minutes. In reach-in cooler: pre sliced cheese 50f for 3 hours.
Hot water supply not maintained during peak periods. Hottest water achieved at all sinks is 80f. Repair services arrived during inspection, and achieved 85f during inspection.
Bowl or other container with no handle used to dispense food. Bowl used as scoops for sauces for cinnamon sugar. Operator replaced bowl for spoon.

Food stored under dripping water line. Observed cookie dough and brownies in walk in freezer with accumulated ice on top of product from ice build up.
Ice buildup in reach-in freezer and/or walk-in freezer. Observed build up of ice in walk in freezer inside walk in cooler. Operator cleaned up ice during inspection.
Standing water in floor drain/floor drain draining very slowly. Observed standing water over floor drain in dry storage area at back of kitchen. Operator cleaned up water during inspection.
