Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. pulled chicken (132F - Hot Holding) item in hot holding cabinet on cooks line, during busy hours item is constantly out of hot box and the door is opened constantly letting the hot air out. All other items at 135F or above. Manager moved item to other warming cabinet. Retemped at 166F.
