Rodent activity present as evidenced by rodent droppings found. Observed approximately 20 droppings in cabinets under unused bar area in concert hall and 3 droppings in the dry storage area across concert hall.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. mashed potatoes (125F - Hot Holding) item in steam table for 3 hours, employee had item double panned in steam she removed the double pan. Employee reheated to 174F.
