Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit Raw beef 50F cold hold. The beef was sitting in a pan that was not sitting flat in the unit. The beef was in the unit for less then 4 hours. The operator rearranged the unit to better fit the pan.
Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. 2 pieces of fresh tuna not removed from package before being thawed.
