Observed raw chicken stored above raw beef in reach in freezer in back storage area- not all products commercially packaged. Operator rearranged meats to properly store.
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Observed Sanitizer Bucket (Chlorine 200ppm) at front cook line area. Operator added additional water to dilute sanitizer solution. Retested at 100ppm.
No plan review submitted and approved - renovations were made or are in progress. Must submit plans and plan review application to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Plans must be submitted AND approved within 60 days. Observed employees in back area behind kitchen that operator stated was recently acquired approximately a month ago, packaging foods for meal prep catering. Room has a couple of prep tables and reach-in cooler but no hand wash sink. Verified that this room not included on current plans in OnBase.
