No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Operator has quaternary ammonium test strips. Operator using chlorine for sanitizer.
Water with a temperature of at least 100 degrees Fahrenheit not provided/shut off at employee handwash sink. Operator having issues with hot water supply. Tank is not heating properly.
No drainboards or equivalent provided for soiled items and/or air drying cleaned items. Provisos on plans states the three-compartment sink must have drain boards on each side or shelf above sinks. There is one drain board area to the right of the three compartment sink. The handwash sink is directly to the left of wash sink.
No handwashing sign provided at a hand sink used by food employees. No hand wash sign at hand wash sink. Provided operator DBPR Form HR 5030-111.
Use of cooking equipment producing grease laden vapors/smoke with no hood suppression system installed. For reporting purposes only. Operator has counter top double fryer partially outside hood system. Operator states will use a different single fryer and will place to the right of the flat grill under the hood suppression system.
