At prep sink- Commercially processed reduced oxygen packaged tuna bearing a label indicating to remove from packaging before thaw not removed- product still frozen- operator removed from packaging.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At reach in cooler, marsala sauce (46F - Cold Holding), not prepared or portioned today. Operator stated items held in cooler overnight, exceeding 6 hours. Operator discarded.

Toxic substance/chemical improperly stored. At spice cart spray bottle of disinfectant stored on same shelf and in between ketchup and mustard bottles, operator moved disinfectant to proper storage shelf
Single-service articles not stored inverted or protected from contamination. Above flip top cooler single serve take out containers are inverted, operator flipped them over.
Working containers of food removed from original container not identified by common name. At prep table squeeze bottle containing a blue liquid not labeled, operator thinks that it may be Gatorade or Powerade belonging to a employee, operator discarded.

Toxic substance/chemical improperly stored. Observed Stainless steel shine cleaner stored on window seal next to flip top cooler in kitchen. Operator stored properly.
Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea is discharged onto surfaces in the establishment. Vomit and diarrhea clean up procedure sent to operator.
No measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine. No measuring device for hot water sanitizer at time of inspection.
Required employee training expired for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233.
Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. Less than 160F, inspector used DBPR provided temperature strips.
