What the inspector wrote — 11 findings
Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. On prep table, sausage patty (105F - Cooling @ 1.5 hours, 94F @ 2 hours). Operator stated item was cooked around 8 am then left on prep table with lids on to cool down. Operator stated he will reheat sausage to 165F then start cooling again.
