Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishwasher (Chlorine 10ppm). Operator set up 3 compartment sink and will be calling ecolab to come look at machine.
Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in the three-compartment sink and/or dishmachine. Establishment has chlorine dishwasher but only has quaternary test strips. Operated stated he will order right test strips immediately.
Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Interior deflector plate of ice machine soiled with mold-like substance.
Employee beverage container/food on a food preparation table or over/next to clean equipment/utensils. Employee drink and food on prep table next to clean equipment. Operator removed employee stuff and stored properly.
