Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly.
Displayed food not properly protected from contamination. Observed a tray of pizza dough on a countertop next to guest seating and path to the restroom. The cook put a lid on the container and moved it behind the line.
Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed the cook remove his gloves after cooking chicken then removed his gloves and put on new gloves without washing his hands.
Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed the dish washer touch dirty dishes and then remove clean dishes with the same gloves.

As per the manager the items were placed in that reach in approximately 2 hours ago. The manager put the items in a different reach in cooler.
