Raw animal foods not properly separated from one another based upon minimum required cooking temperature when stored in a freezer - not all products commercially packaged. Observed raw chicken patties over raw beef patties at walk-in freezer. Coached manager in correct storage procedure.
Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. Observed operator conducting reduced oxygen packaging of chicken, beef, fish, and vegetables with no HACCP plan. These reduced oxygen packaged products are then sous vide cooked and sold.
