Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Raw steak and sliced turkey cold holding at 49-50f. Advised rapid chill to 41 or colder. Employees removed for rapid chill and replaced with cold product.
Food-contact surface soiled with paper from between raw chicken steaks. Employee unwrapped chicken and put contaminated paper on cutting board. Advised to throw paper away immediately.
