Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Sanitizer Bucket (Chlorine 200+ppm) Operator dumped half the water and added more water, rechecked 50ppm chlorine sanitizer.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. chili (57F - Cooling) at 2:20; cooling since 1:50 - 56F at 2:40 Observed in covered container at flip top cooler. At current rate of cooling product will not reach 41F within 4 hours. Operator placed product in reach in freezer.
