Per person in charge employees spray quat sanitizer onto washed food containers and wipe off. Discussed proper wash,rinse,sanitize with person in charge. Person in charge set up triple sink to 200ppm.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed fresh mozzarella (49F - Cold Holding) left on pizza make line for 10 mins per person in charge. Discussed time control and provided paper work.

Plumbing system in disrepair. Hand washing station by triple sink not draining and p-trap pipe leaking. Person in charge is on warning through grease trap inspector for 7 days. Establishment has hand washing station at bar.
Time/temperature control for safety food packaged using a reduced oxygen method without a HACCP plan not properly labeled with the production time and date. Observed chicken wings cooked in sous vide and removed from reduced oxygen environment within 48 hrs per person in charge not labeled with date and time. Discussed with person in charge.
