Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed shredded cheese (67F - Cold Holding); at the buffet line. As per the manager the cheese was put on line approximately at 6:30 AM. The manager put the cheese in the reach in cooler to cool it down. I observed non TCS foods being held cold at the buffet line and suggested they change the location of the cheese with one of those items going forward.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed the can opener blade soiled.
Handwash sink used for purposes other than handwashing. Observed pieces of fruit in the hand wash sink.
No paper towels or mechanical hand drying device provided at handwash sink. Observed in the kitchen. The manager brought towels.
Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed an open cup with an orange liquid on a prep table with fresh fruit underneath it. The manager discarded it.
Ice bucket stored on floor between uses. The manager put in on a shelf.

Dishmachine not sanitizing properly. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cream cheese (66F - Cold Holding); cottage cheese (66F);. As per the cook the items were put on line approximately at 6:30. The cook noticed the unit was unplugged and plug it in. The unit began to cool the items down.
