Going to time as a public health control, started at 10, goes until discard at 2:00pm. Hot dogs in the same cold well, 49°, goes to time as a public health control until 2pm, then discard. ALSO, butter on the cook line, hot held at 101°, cold held at 51 and 59°. Hot hot time as a public health control until 2pm. Cold hold until 4pm if tracked and stays below 70°, per the time as a public health control form.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed the soda nozzles on the drive thru line are soiled. ALSO, the unsweetened tea nozzle at the drive thru has build up. Then, the unsweetened tea nozzle in the dining area has build up.
Manager or person in charge lacking proof of food manager certification. Observed : Avis lacking a copy of her Certified Food Manager card.

The reach-in cooler was turned off to defrost this morning. Pasta was moved into the walk-in cooler. ALSO, on the left end of the cook line, hot dog, 45°. All time/temperature control for safety items moved uncovered to the walk-in cooler. Hotdog was at 41° on 9 minutes.
Toxic substance/chemical improperly stored. Observed: easy off spray cleaner on the prep table at the drive thru window. This was moved to cleaning.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed: multiple nozzles at the drive thru soda fountain with build up.

Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet. Observed: at the mop sink on the non-chemical side of the splitter, lack of vacuum breaker.

Observed: reheated chili in an amber cambro, added to the 109F chili on the cook line, now 110F. When reheated again, reheated to 114F. The Manager then placed the cambro pan into the microwave for reheating.
