Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Pasta in reach-in cooler at 49f for 2 hours. Upon observation, pasta was double panned and unable to allow proper cold-holding. Operator removed bottom pan during inspection.
Bowl or other container with no handle used to dispense food. Cups used as scoops for several items in walk-in freezer.
Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Ceiling tiles and vents on make line soiled and discolored with grease.
Equipment in poor repair. Dishmachine down for repairs. 3 compartment sink is set up until repairs can be made. Per operator, repairs are scheduled for tomorrow.
A return visit. The problems from the previous inspection had been dealt with.

Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Quaternary sanitizer bucket reading 500ppm, over manufacturer recommendations.
Ceiling/ceiling tile shows damage or is in disrepair. Ceiling tiles in break area and dining area. Dining area tiles dropping condensation from A/C unit. Manager stated unit is undergoing repairs and affected tables have been closed from service.
