Time/temperature control for safety food thawed in an improper manner. During inspection observed chili concentrate thawing water at 70 degrees Fahrenheit and standing water at 90 degrees Fahrenheit. Put in to thaw at 10 am. Educated Manager put onto stove to cook.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Temp butter at 11:00am at 64 degrees Fahrenheit. No stop sale issued at this time butter was taken out at 9 am. Inspector completed time as public health control form with manager for butter.
