Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the reach in cooler next to the cook top raw salmon (57F - Cold Holding); raw grouper (52F - Cold Holding); raw mahi (50F - Cold Holding); raw flounder (56F). Operator stated foods had been refilled to the reach in cooler two hours prior to inspection. I advised operator to add some ice to bring down the temperature of fish.
