Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized: observed three compartment sink quatrenary amonium sanitizer testing to 0ppm. New bottle was under the sink but not connected. Employee connected the bottle and refilled the sink. Retested to 200ppm.
