Observed Wiping cloth sanitizing solution stored on the floor in bar area. Chef moved to shelf.

Manager called maintenance and scheduled for today with in one hour. Manager provided request for service report during time of inspection. Do not store time/temperature control for safety food in this unit until the unit is repaired.

Observed butter held using time as a public health control marked with a time that exceeds the 4-hour limit. Advised manager and he discarded.
Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw beef patties being stored over various ready to eat foods on prep cart in walk in cooler and raw salmon stored over cooked lobster in walk in freezer. Advised manager and he rearranged.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed the following food temperatures greater than 41°F; shredded cheese (51F - Cold Holding); cut tomatoes (51F - Cold Holding); rotini (45F - Cold Holding); krab cakes (60F - Cold Holding); raw beef (49F - Cold Holding); cooked pork (62F - Cold Holding) All foods were stored in reach in coolers with ambient temperature of 57°F and 65°F. Per manager food had only been in cooler for about 1 hour before inspection. Manager removed all TCS foods from cooler and placed into nearby working coolers. Advised operator not to store TCS foods in coolers until unit is fully functional and holding proper temperature.

Handwash sink next to ice machine not accessible for employee use at all times due to ice scoop being stored inside next to ice machine and table blocking in kitchen area.
Observed establishment using time as of public health control with no written plan. Provided form to operator and assisted him in filling out.
