Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Raw hamburger meat stored on shelf directly above pan containing beef. Manager stated the beef has not been injected or blade tenderized. Manager moved the raw hamburger meat to the bottom shelf during this inspection.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In pan on grill: grilled mushrooms (105F - Hot Holding). Manager stated the mushrooms have been held hot for approximately 15 minutes and reheated them to 209F during this inspection.
Food-contact surface soiled with food debris, mold-like substance or slime. Top of ice machine interior soiled with lime-like substance.
Buildup of food debris/soil residue on equipment door handles. Handle on ice machine door soiled with lime-like substance. Manager cleaned the ice machine door during this inspection.

Old labels stuck to food containers after cleaning. Seven pans with remnants of old labels still attached drying on table in back of kitchen. Manager moved items back to the warewash area to be properly washed, rinsed, and sanitized.

Dish machine chlorine 0ppm. Manager primed machine, still 0ppm. Manager unclogged sanitizer line, then primed machine again, then chlorine 50ppm.
Employee touched soiled apron/clothes and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Employee at cookline pulled up pants with gloved hands, the proceeded to pour barbecue sauce on chicken wings without first washing hands and changing gloves. Manager had employee wash hands and put on new gloves before continuing to work at cookline.

Dish machine chlorine 0ppm. Manager attempted to prime machine, still 0ppm. Manager managed to unclog the line, then 50ppm. Inspector instructed manager to sanitize all dishes that have been washed with the dish machine today.
Raw animal food stored over/not properly separated from ready-to-eat food. Pan of raw beef stored directly on top of pan containing cooked pasta inside reach-in cooler at cookline. Manager moved the raw beef to the bottom shelf during this inspection.

Inside reach-in coolers near cookline: shrimp (44F - Cold Holding); chicken (44F-45F - Cold Holding); salmon (45F - Cold Holding). Manager stated all have been held inside unit for approximately two hours. Manager had an employee begin cleaning nozzles during this inspection.
