Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed employee picked up debris from floor, then put on gloves to prepare pizza without washing hands first. Discussed proper handwash techniques with employee.

Walk-in cooler - Cold Holding: fresh mozzarella 50 F, minced garlic in oil 48 F, sliced ham 50 F, sliced salami 49 F, ambient temperature is 50F and fans blowing at 46-47 F. Employee moved all time/temperature control for safety food to working reach-in cooler and reach-in freezer at time of inspection. A small container of sliced ham 53 F and cut tomato 53 F stored on reach-in cooler. Employee moved into reach-in cooler.
