Cooked seafood not reaching a minimum internal temperature of 145 degrees Fahrenheit for 15 seconds. Shrimp (69F - Cooking), employee finished cooking shrimp and place on burger and observed 1 out of 4 pieces of shrimp was not at minimum cooking temperature and customer did not order food undercook. Employee voluntarily discarded the 1 under cooked shrimp instead of finishing cooking it to proper temperature.
Employee began working with food, handling clean equipment or utensils, or touching unwrapped single-service items without first washing hands. Observed employee start work and place on gloves and begin working with food and not wash hands prior to putting on gloves to work with food. Only 1 hand wash sink in kitchen area and none on front counter. Reviewed with person in charge
Employee switched from working with raw food to ready-to-eat food without washing hands. Observed cook employee with gloves on hand handle raw beef and raw shrimp to put on grill and then continue to handle to go containers and bread and other ready to eat foods without washing hands. Employee later put on new gloves but still no hand wash
