Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In make line reach-in cooler for 1 hour: coleslaw 46f, shredded cheese 45f. In lowboy reach-in cooler under flat top grill for 1 hour: salmon 45f, chicken 44f. Operator put ice bags on salmon and chicken. After 1 hour, coleslaw got to 38f, salmon got to 37f, chicken got down to 43f, shredded cheese did not change.
Floor soiled/has accumulation of debris. Floor under flat top grill soiled with grease build-up and food debris.

Quaternary ammonium sanitizer in sanitizer bucket not at proper minimum strength. 0ppm on sanitizer bucket at cook line on inspector test strips. Manger refilled sanitizer bucket and retested to 300ppm.

Raw/undercooked animal food offered and establishment has no written consumer advisory. Raw animal foods must be fully cooked prior to service: Brunch menu has eggs cooked to order, however, there is not a Consumer Advisory on it or in plain view in the establishment. General Manager went to the office and made new menus during the inspection.
Employee with no beard guard/restraint while engaging in food preparation: One employee in the kitchen started cooking food and did not have a beard guard on. However, the Kitchen Manager noticed and had him put one on.
