At front counter low boy, sliced ham (50F - Cooling)@11:30 since 9:30, 49F @12:03, at the current rate, product will not reach 41F within 4 hours. Advised operator of proper cooling parameters. Operator placed items into walk in cooler to facilitate cooling process.
