Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed : prepped steak from today, on the front line, go from 47° to 49°, shredded cheese 47°, chicken prepped about 10 am, 47°, there was an openslot, a lid was placed on the open area.
Toxic substance/chemical improperly stored. Observed : pump hand sanitizer stored over front line meatballs. This was moved to the ledge outside of the glass display.
No proof of required state approved employee training provided for any employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Observed : lack of proof of ant training.

Observed: the stored tomato slicer with dried food debris on the pusher head leaves. This was placed in hot soapy water.
Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Observed: purse/backpack stored on the first shelf in the kitchen, over the veggie slicer.
No Heimlich maneuver/choking sign posted. Observed: lack of a choking poster. One will be emailed.

Probe thermometer not accurate within plus or minus 2 degrees Fahrenheit. Observed: the probe thermometer reads 22F in a proper ice bath. This was adjusted to 32F.
Current Hotel and Restaurant license not displayed. Observed the displayed license expired in June 2023. The current one was faxed and posted.
Employee personal food not properly identified and segregated from food to be served to the public. Observed: tv dinner stored on guest food in the walk-in freezer. This was moved below and labeled.
