Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Meatballs had been reheated 15 minutes prior to inspection and were at 124F. Person in charge raised temperature on unit and meat balls were 158F 20 minutes later.
