Reach in cooler located at front counter observed ham (43F - Cold Holding); Cheese Pizza (50F - Cold Holding); Tuna Salad (49F - Cold Holding); Roast beef (51F - Cold Holding); Cooked chicken (46F - Cold Holding), as per employee for less than 3 hours. Employee transferred food items to another working unit for a rapid cool.

Food stored in a location that is exposed to splash/dust. Observed Saltine crackers stored near the hand sink under the hand soap dispenser exposed to splash or hand soap, crackers were covered with a plastic wrap. Empire replaced the location of the crackers.
