Operating with an expired Division of Hotels and Restaurants license. Observed the restaurant operating with an expired license while open and operating to the public. The operator renewed the license during the inspection.

Observed sliced cheese (50F - Cold Holding) stored stacked above the fill line in the top section of the reach in cooler at the sandwich station. The operator stated the cheese had been held for approximately 1 hour. The operator emptied half of the contents and stored in an alternate cold holding unit.

Observed reach in cooler next to three compartment sink with ice build up on inside and the following temperatures Tuna Salad (43F - Cold Holding); Sliced Roast Beef (45F- Cold Holding);Sliced Ham (46F - Cold Holding). Observed operator volunteerly removing items and storing in stand up reach in cooler.
