Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. cut tomatoes (44-45F - Cold Holding); sliced white American cheese (45F - Cold Holding); in walk-in-cooler. Operator stated the door was opened for approximately 30 min to put the food delivery away. Retemped at end of inspection and both dropped approximately 1 degree. Operator loosened lids to help chill foods.
