Observed sliced tomatoes (45F - Cold Holding); cooked chicken (44F - Cold Holding); sliced turkey (44F - Cold Holding); tuna salad (43F - Cold Holding); cooked steak (43F - Cold Holding) at front counter, as per operator less than 2 hours. Operator closed lid for rapid cooling.

Observed employee took gloves went to walk in cooler to get some product to restock prep line, customer was ordering food he proceeded to put gloves and took bread to prepare sandwich. Coach employee how to properly wash hands every time he finished and changed tasks how to wash hands and put new gloves.
