Time/temperature control for safety, commercially processed food reheating for hot holding not heated to a minimum temperature of 135 degrees Fahrenheit in all parts. In the steam table, meatballs (94-137F - Reheating). The manager stated that the meatballs were reheated at 9:00am and had completed reheating. The meatballs were removed from the steam table and reheated to 156F on the second temperature taken.

The meatballs were placed in the cooler approximately 2 hours ago. The meatballs were moved to another reach in cooler to chill and cold hold.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. At the front counter, ham cut at 12:00 (52F - Cooling at 2:00) 51F at 2:40; turkey cut at 12:00 (52F - Cooling at 2:00) 51F at 2:40. The items were stored covered and stacked. The operator uncovered and spread out to cool faster.

In the steam table, meatballs (90F - Reheating); tomato sauce (115F - Reheating). The items were removed from the steam table and placed back into to microwave to finish reheating to 165°F.Second temperature taken, 167°F
