Operator stated that she working on setting up front counter for the past hour and had lid open. Operator took beef and chicken to walk in cooler. 2nd temperature 20 minutes later 41F.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Meatballs on front counter temperature at 129F. Operator stated that she heated to 165 an hour ago. Operator reheated meatballs to 165F. Also operator turning steam table up higher.
