Observed in the fortnight right make table: Turkey (62F - Cold Holding); Beef (62F - Cold Holding); Ham (62F - Cold Holding). Operator stated it had been out for approximately 3hrs. Operator the food in the walk in cooler.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed in the steam table: Meatballs (77F - Hot Holding). Operator stated it had been outfitted for approximately 1hr. Operator placed it in the oven to reheat.
