Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Sliced tomatoes 46F cold hold, second temperature 43F cooling, cut lettuce 46F cold hold, second temperature 43F cooling. Second temperature was taken 9:30am. Operator had filled the fron refrigerated unit before turning it on that morning causing the food temperatures to rise. We discussed turning that unit on first thing in the morning at the same time the heated wells are turned on.
