Observed Cut Tomatoes (49F - Cold Holding); Shredded Lettuce (50F - Cold Holding); Turkey (51F - Cold Holding); Mozzarella Cheese (50F - Cold Holding); Ham (50F - Cold Holding) in the reach-in coolers at the front assembly line with the ambient air temperatures on the coolers reading 51F and 55F. Employee stated items had been in the cooler for 1 hour. Employee started to ice products down until machines are serviced.
