Temperatures were 118F for one pan and 122F for the other. Observed that the steam table was low on water. Operator discarded both pans and and added more water to the steamtable.

Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed gaskets in reach in cooler soiled front of kitchen.

Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Observed their triple sink at 50ppm quaternary. Operator replaced the sanitizer and remade the sink at 200ppm.

Observed 3 bay sink with hose attached to faucet and other end of hose end in standing water of 3 bay sink. Must add a vacuum breaker to faucet above the hose or cut hose to within 1.5 inches above the sink rim.
Clean utensils or equipment stored in dirty drawer or rack. Observed mandolin slicer stored in dirty bin under prep table at back.
