Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed rotisserie chicken (47F - Cold Holding); shredded beef (46F - Cold Holding); grilled chicken (44F - Cold Holding)in cold well at front counter. These items are separated into plastic boats by serving size and the unit cannot cool them efficiently due to packaging. Operator added plastic lids to bins to help cooler maintain foods at 41F or colder. Operator will rearrange reachin cooler putting easier to cook foods in warmest area beside cutting board and boated items at back of cooler where unit is coldest. The foods temped today were just added to unit 45 min ago. Operator will monitor cooling and make sure items reach 41F within 4 hours or are sold. After 1 hour of lids being placed on items food temperatures for rotisserie chicken dropped to 42F

Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Observed quat at 100ppm corrected by dropping water and reloading sink. Corrected to 200ppm. Observed sanitizer dispenser hooked up to hot water and water is at118F. Quaternary Manufactures recommends using water at 70 to 90 F. Quaternary ammonium looses effective solution concentration at hotter temperatures.
