Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. 1. Front line cooked beef (42F-51F Cooling) observed in thick silicone portion cups stored in a stainless steel food container double panned. At this rate item will not reach proper cooling. Operator removed top portions and stored in reach in freezer to quick chill.

On the toppings side of the make table, sliced tomatoes (54F - Cold Holding); cut lettuce (54F - Cold Holding). The employee stated the table was turned off for cleaning for a period of time prior to loading the table this morning, less than 4 hours ago. The items were not prepped or portioned today. The items were returned to the reach in cooler and replaced with items at the correct temperature.
