Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Cut cucumber (47F - Cold Holding); sliced tomato (50F - Cold Holding) Foods stored in walk in cooler overnight and brought out for storage in front counter reach in cooler around 9:45AM. Operator explained that the reach in cooler doesn't always work properly and freezes over often. Operator moved items to walk in cooler to cool. Retemped cucumbers at 42F, tomatoes at 40F.
