At current rate of cooling product will not reach 41F within 4 hours. Operator moved to walk in freezer to quick chill.

Sandwich cooler: pepper jack cheese (51F - Cooling) at 10:45 since 10:00 - 51F 11:05 Observed stacked to top of pan at sandwich assembly cooler. At current rate of cooling product will not reach 41F within 4 hours. Operator split container in half and returned to walk in cooler.
